What is the problem with pasteurization

Beer contains a large number of yeast microorganisms; therefore, without heating it is not stored for a long time.

Pasteurization is necessary to prevent the active reproduction of fungi and lactic acid bacteria, which changes the taste and reduces the safety of the drink.

Heating helps extend the shelf life of the product.

During pasteurization, the liquid is subjected to short-term heating to temperatures above 60ºС and below 100ºС, and then quickly cooled. The main problem in this process is how to destroy the microorganisms without losing the taste of the beer. The “boiled” drink, as well as the quickly fermented one, will return to the brewer’s warehouse.

Any return of beer leads to following losses:

  • reputation — decline of consumer and partner confidence;
  • commercial — sales losses, fines for low-quality product;
  • legal — claims for violation of the terms of the contract, as well as from the side of sanitary and supervisory authorities.

Types of industrial beer pasteurizers

In fact, there are only two types of pasteurizing-cooling plants:
Flush pasteurizer
The product itself (liquid) is heated in it, passing through the heat exchanger. It is then held at a given temperature for the required time. After that, the flow is directed to the regeneration and cooling section, where the liquid is cooled for further bottling.
Tunnel pasteurizer
Is used for heating of the product already poured into cans or bottles.
But there are a lot of pasteurizers modifications, and hence the differences in the price of different models of equipment.

Plants vary in performance. A 500 litre per hour beer pasteurizer costs more than a 300 litre\hour pasteurizer or 200 litre\hour.

Equipment can have a different number of sections. The simplest models consist of regeneration and pasteurization sections. In complex six-section devices, the cooler, outlet for separation, outlet for homogenization, regeneration section, pasteurization, production of superheated water are separated. Some models are equipped with built-in CIP washers.

Different modifications have differences in the types of heat exchangers: tube-type or plate-type, the number of pumps.

Pasteurizers also differ in the degree of automation: from a single-channel controller to a fully functional industrial computer with recording and control of all pasteurization parameters. The price of individual options such as an automatic pressure maintenance unit or a flow meter can account for a large portion of the equipment cost.

Possible solutions to improve the pasteurization process

First, we will install a monitoring system and, based on its data we will analyze the existing pasteurization and filling process.

Without initial data, it is difficult to give recommendations on ways to improve the microbiological condition of beer.
